Natural products behave differently from heavily processed ones, and that surprises people. Honey crystallises. Oil changes consistency with the weather. Nut butter separates. None of these are signs of spoilage — but a few simple habits will keep everything at its best.

Honey

Store it sealed, at room temperature, away from direct sunlight. Do not refrigerate it — cold speeds up crystallisation. If it does crystallise, stand the jar in warm (not boiling) water and stir until it loosens. Boiling water damages the very compounds that make raw honey worth buying. Always use a dry spoon; water introduced into the jar is what actually causes honey to ferment.

Red palm oil

Keep it sealed and out of direct light. It naturally firms up in cool conditions and loosens again in warmth — both states are normal and neither affects quality. Close the lid properly; prolonged exposure to air is what dulls the flavour over time.

Groundnut and seed butters

Separation is expected in butter with no added stabilisers. Stir the oil back through before use. Storing the jar upside down between uses helps keep it evenly mixed. In hot climates, refrigeration extends freshness — it will firm up, so allow a few minutes at room temperature before spreading.

One rule covers all three: seal it, keep it dry, keep it out of the sun.
